Here’s a creamy balsamic dressing with a pure flavor, wholesome ingredients and a taste that has you coming back for more! Add this amazing dressing to fresh, crisp butter lettuce, crunchy-sweet pear and toasted walnuts and you’ve just made the perfect holiday salad. Enjoy!
3 tablespoons olive oil
3 tablespoons Balsamic Vinegar
5 tablespoons coconut cream
1 teaspoon fresh thyme
2 cloves Garlic
1 teaspoon dijon mustard
1 teaspoon coconut palm sugar (OR honey OR a few drops of stevia)
sea salt and black pepper
⅓ cup Walnuts
1 head Butter Lettuce
2 Asian Pears, thinly sliced and seeded
Combine all of the dressing ingredients in a blender. Blend until smooth.
Place the walnuts in a dry skillet over medium heat until lightly toasted, stirring occasionally, about 6 minutes. Remove from the heat, cool and chop.
Wash the butter lettuce and tear into bite-sized pieces into a large bowl. Seed and thinly slice the pears, and add to the bowl. Toss with the dressing and portion onto individual plates. Top with the chopped walnuts. Enjoy!
