Dreamy, creamy peanut butter sauce over tender noodles and savory chicken - are you kidding me?!?
I don't know of a tastier, more satisfying meal than this one! The flavors are incredible, the creaminess is delicious and the noodles are spectacular! What is crazy is how healthy this meal actually is, considering how naughty it tastes. It's high in protein and nutrients while being low in carbs and sugar. And the kids love it too!
If you aren't able to enjoy peanut butter then feel free to sub with almond butter or tahini. Enjoy!
5 Green Zucchinis
2 teaspoons sesame oil
¼ cup coconut aminos
3 tablespoons crunchy peanut butter
2 tablespoons apple cider vinegar
1 tablespoon garlic chili sauce
1 tablespoon olive oil
¼ cup shallots, minced
1 tablespoon fresh ginger, minced
1 red bell pepper, seeded and thinly sliced
1½ pounds boneless, skinless chicken thighs, chopped into cubes
½ cup fresh scallions, chopped
Use a veggie peeler to remove the green skin from the zucchini. Run through a spiral slicer to create long, thin noodles.
In a large skillet place the sesame oil over low heat. Add the noodles and gently warm for 3 minutes. Remove from the heat and set aside.
In a small bowl combine all of the sauce ingredients.
Wipe out the large skillet and place the olive oil over medium high heat. Add the shallots and ginger and cook for 2 minutes. Add the bell pepper and continue to cook for another 3 minutes. Add the chicken pieces and cook until the pink is gone.
Add the sauce to the skillet and continue to cook for 3 minutes, until thickened. Reduce the heat to low and add the noodles to the skillet. Mix well. Remove from heat and garnish with chopped scallions. Serve immediately. Enjoy!
