Note: If you have fresh or frozen berries on hand, then whip up a little berry sauce. In a saucepan, combine 1 cup berries with 1 teaspoon arrowroot starch, a pinch of sea salt, 1/4 cup water, the juice and zest from a small lemon, and raw honey or stevia to taste. Bring to a boil, stirring constantly, then cook for another 2–3 minutes, until thickened.


Serves 6

¼ cup coconut flour

½ cup arrowroot starch

½ teaspoon sea salt

1 can (13.66oz) coconut milk, full fat

6 eggs


Directions

Combine all of the ingredients in a high-speed blender and blend until completely smooth.

Heat a lightly oiled griddle or frying pan over medium-high heat. Use a 1/4 cup to pour the batter onto the griddle. Tilt the pan in a circular motion so that the batter evenly coats the pan.

Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn, and cook the other side for 2 minutes or until golden. Repeat with the batter and more coconut oil as needed. Serve hot.
