2 acorn squash, seeds removed and cut into quarters
3 tablespoons coconut oil
3 tablespoons coconut palm sugar
½ teaspoon sea salt
¼ teaspoon ground cinnamon
Preheat the oven to 400 degrees F. Fill a large casserole pan with 1/2 an inch of water.
Rub each piece of the acorn squash with the coconut oil and place, cut side up, in the prepared pan. Evenly sprinkle with the coconut sugar, salt and cinnamon.
Bake in the preheated oven for 60 minutes, or until very tender. Enjoy!
