This simple dressing is filled with the refreshing flavor of cilantro. It’s wonderful drizzled over fresh greens or a yummy taco salad.
Note: Stop buying salad dressing from the store. Immediately, this minute. Store-bought dressing is filled with harmful and toxic ingredients, so let’s avoid it. Here’s the equation for a wholesome, homemade salad dressing: 3 parts high quality oil, 1 part lemon juice or vinegar, dash of sea salt and fresh black pepper, and a few tablespoons of fresh or dried herbs.
1 can (13.66oz) coconut milk, full fat, chilled overnight
1 cup fresh cilantro, chopped
2 tablespoons lime juice
1 clove Garlic
½ cup olive oil
2 teaspoons apple cider vinegar
½ teaspoon sea salt
dash of black pepper
Chill the can of coconut milk in the fridge overnight. Do NOT shake the cans up at all! Ever! Carefully turn the cans over and open from the bottom. Drain out the liquid and scoop the white cream into a blender. Discard the liquid.
Add the remaining ingredients to the blender. Blend until smooth. Chill for 20 minutes. Enjoy!
