Back in my early twenties, when I was a junk food vegetarian and blissfully unaware of the massive nutritional voids in my diet, I would eat purely for taste. (Gasp!)
Yep, if it tasted good and was fairly quick and cost-effective, then I would dip it in ketchup and eat it. Looking back, I’m sure that the only reason that I wasn’t 600 pounds and counting was my love of exercise. (Phew!)
My favorite breakfast, at the time, was a toasted chocolate chip bagel (bought at the supermarket in bulk on Sundays) slathered in cream cheese, mounded with scrambled eggs, and smothered in cheddar cheese. I’d cut it into four pieces and dip it in ketchup. (Oh how far I’ve come . . .)
These days, I’ll occasionally make an egg sandwich out of chocolate chip pancakes with a scrambled egg and crispy bacon—and dip it in natural ketchup. Ahhh, a delicious walk down memory lane—without the grains, gluten, dairy, and refined sugar!
1 ripe banana, mashed
2 eggs
¼ cup coconut milk, full fat
¼ cup coconut palm sugar
1 tablespoon vanilla extract
¼ teaspoon almond extract
1 cup blanched almond flour
½ teaspoon baking soda
½ teaspoon sea salt
½ cup lily’s chocolate chips (stevia sweetened)
4 bacon strips, cooked and halved lengthwise and widthwise
In a large mixing bowl, combine the banana, eggs, coconut milk, coconut sugar, and vanilla and almond extracts. Mix until the big banana lumps have disappeared.
In a medium bowl, combine the almond flour, baking soda, and sea salt. Mix well. Add the dry ingredients to the wet and mix until fully combined. Stir in the chocolate chips.
Place a pancake griddle over medium heat and generously grease with coconut oil. Use a 1/4 cup to scoop the batter onto the griddle. (If you want your pancake sandwiches to be perfectly symmetrical, then use a metal cookie cutter or pancake shaper—otherwise, appreciate the beauty of asymmetry.) When bubbles form in the pancakes, flip to cook the other side.
Assemble the sandwiches with a pancake on the bottom, a scrambled egg and strip of bacon, and a pancake on top. If you want the full experience, then cut your sandwich into 4 pieces and dip into some (all-natural) ketchup.
