If you haven’t yet been introduced to the concept of cauliflower rice, allow me to do the introduction. Cauliflower rice, meet my dear, recipe-loving friend. Dear friend, meet cauliflower rice.
Cauliflower rice is shredded cauliflower that is seasoned, lightly cooked, and served as you would traditional grain rice. It’s low in calories, low in carbs, and high in awesomeness.
Note: There are soooo many ways that you can make cauliflower rice. This is the most basic version. On this site you’ll find recipes for island-style fried rice, wild rice, shiitake stir-fried rice and more. Yum, yum, and yum!
1 head cauliflower
1 tablespoon olive oil
sea salt
black pepper
Wash the cauliflower and discard the leaves. Chop into small florets. Run the florets through the food processor with a grating attachment to create small, rice-like pieces.
Pour the olive oil into a large skillet over medium heat. Add the shredded cauliflower to the skillet. Sauté for 5 minutes or until tender, and then season with salt and pepper. Enjoy as a side to your favorite meal!
