These wholesome Cajun-Roasted Pumpkin Seeds are a great place to start your real-food journey—or another tasty chapter of a journey that you’re already on. Note: Pumpkin seeds aren’t the only seeds worth roasting. You could also roast the seeds from butternut squash or acorn squash.
1 tablespoon coconut oil
1 cup fresh pumpkin seeds, washed and dried
1 tablespoon Cajun seasoning blend
¼ teaspoon sea salt
Preheat the oven to 325°F. Line a baking sheet with parchment paper and set aside.
Place a skillet over medium heat. Heat the coconut oil, and then add the pumpkin seeds and sauté for 5 minutes, until golden brown. Sprinkle with the Cajun seasoning and sea salt, mix until fully incorporated, and then spread the seeds on the rimmed baking sheet.
Roast for 15–20 minutes, until golden and crisp. Store in an airtight container at room temperature for up to 1 week.
