Bread is a huge part of our food culture. Some form of bread is included in nearly all restaurant and home cooked meals. We grew up eating bread, and we give our kids bread. Bread is part of who we are.So what do you do when you figure out that all that bread is causing weight gain? Throw out your breadbox and be done with it?

Well, that approach would work, but I’d rather adapt my bread recipes by using real food ingredients and leaving the grains out. This way there’s still a slice of something warm and soft to be eaten with dinner, and I can still make French toast on the weekends.

Yes, you can still enjoy a slice of bread while avoiding grains and gluten. This moist bread is made with almond meal, which gives it a delicious nutty flavor.

Note: This recipe could be made with either blanched almond flour or almond meal. The difference? Blanched almond flour is made with blanched almonds with the skins removed. Almond meal is made with almonds that still have their skins on. As a result, almond meal is heartier, darker in color, and produces baked goods that are denser. Baked goods made with blanched almond flour are lighter in color and more delicate in texture.


Serves 16

2 tablespoons raw honey

5 cups blanched almond flour

1 teaspoon baking soda

½ teaspoon sea salt

6 eggs

2 teaspoons apple cider vinegar


Directions

Preheat the oven to 300 degrees. Grease a loaf pan with coconut oil.

Place the raw honey in a small pot and put in a small skillet filled with water over medium heat. Mix occasionally until the honey melts. Remove from heat and cool.

Combine the almond flour, baking soda, and sea salt in a medium bowl.

Crack eggs into a large bowl. Whisk. Add the apple cider vinegar. Mix in the melted honey. Add the dry ingredients to the wet ingredients. Mix until well combined.

Place the dough into the prepared loaf pan. Smooth the top. Bake for 45 minutes or until golden and baked through. Loosed the side of the loaf immediately after removing from the oven, and then cool completely before removing from the pan. Enjoy!
