Here’s a simple, quick main dish recipe that is ready in 10 minutes flat! It’s a great way to use yesterday’s leftover roasted chicken, as well as the perfect reason to whip up a batch of my favorite BBQ sauce.
Remember, healthy eating is as convenient as you make it. It takes longer to go to a fast food restaurant than it does to throw this vibrant dish together.

1 cup roasted chicken, chopped
½ red bell pepper, seeded and sliced
½ green bell pepper, seeded and sliced
1 tablespoon BBQ sauce
1 large avocado, pitted, halved lengthwise
1 tablespoon cilantro, chopped
1 sprinkle sweet paprika
1 sprinkle sea salt
1 sprinkle black pepper
In a medium bowl combine the chicken, bell peppers and BBQ sauce. Mix until fully combined.
Divide the chicken mixture between the two avocado halves and sprinkle with cilantro, sweet paprika, sea salt and black pepper. Serve immediately. Enjoy!
