Donuts are my Achilles’ heel. Well, apple fritters from Donut Star, to be more specific. I love everything about the gooey-appley-doughy glazed goodness. Unfortunately, apple fritters are LOADED with sugar, carbs and not-good fats, so I only occasionally enjoy one on a cheat day. On all other days I enjoy these guilt-free Apple Spice Protein Donuts which are low in sugar, low in carbs, and high in appley glazed goodness!
Quick Tip:Another way to dress these tasty donut morsels is to roll them in a shallow bowl of coconut sugar and ground cinnamon
1 teaspoon coconut oil
¼ cup apple, finely chopped
1 teaspoon pure maple syrup
¼ teaspoon ground cinnamon
Dash of sea salt
2 tablespoons coconut flour
½ teaspoon baking powder
¼ teaspoon ground cinnamon
2 egg whites, at room temperature
1 tablespoon coconut oil, melted
3 tablespoons coconut oil, melted
1 tablespoon Swerve Confectioners Style
In a small skillet, heat the coconut oil over medium. Add the finely chopped apple and cook, stirring often until very soft, about 5 minutes. Add the syrup, cinnamon, and salt. Continue to cook for another 2 minutes. Remove from heat and allow to cool.
Preheat oven to 325 degrees F.
Combine the protein powder, coconut flour, baking powder and cinnamon together in a medium bowl. Add the egg whites and coconut oil and mix well until a dough forms.
Use a piping bag, or ziplock bag with the corner cut, to pipe the dough into a silicone 12-mold mini donut pan. Evenly sprinkle the apple spice mixture over the tops of the donuts, and lightly press into the dough.
Bake for 8 minutes in the preheated oven.
Cool slightly, remove from the mold and place lined with parchment paper. Place the donuts in the freezer while you prepare the glaze ingredients.
Combine the glaze ingredients in a medium bowl with a fork. Dip each cooled donut into the glaze and place back on the parchment paper line plate until set. Sprinkle with sea salt and ground cinnamon.
