I wish that everyone would realize how simple healthy cooking truly is. There’s nothing complicated, scary or difficult about preparing a wholesome, real food meal at home. There just isn’t. Once you get the hang of preparing real food meals it becomes second nature. And it’s oh-so gratifying.

This recipe for Apple Roasted Veggies is the perfect example of a simple, quick, real food dish that practically makes itself. It would probably take you longer to get into the car and drive to a fast food restaurant than it would to quickly throw these fresh ingredients together and into the oven for a quick roasting!

We are facing a huge crisis today as more people than ever battle with obesity, heart disease and diabetes. These modern day diseases can be avoided and greatly alleviated with a diet rich in natural, whole foods. It all starts by making quick and simple recipes like this at home, as we begin to build our diets around vegetables, fruits, nuts, eggs and lean meats. This way of eating is very possible and surprisingly delicious!

I added a touch of pure maple syrup to these veggies, to really bring out the natural sweetness of the apples, and it was a huge hit with the kids. Feel free to leave the syrup out if you’d prefer, and to throw in any other fresh herbs or vegetables that you have on hand. Enjoy

Serves 6

1 head cauliflower, chopped

2 apples

1 red onion

2 tablespoons fresh rosemary, minced

1 tablespoon olive oil

1 teaspoon pure maple syrup

½ teaspoon sea salt

⅛ teaspoon black pepper


Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.


Wash the cauliflower and apples. Chop the cauliflower into florets. Seed and chop the apples. Chop the onion. Mince the rosemary. Combine everything in a large bowl.


Add the olive oil, maple syrup, sea salt and black pepper to the bowl and mix until fully combined. Pour the veggies over the prepared pan.


Roast for 15 minutes, stir, roast for another 15 minutes. Once the veggies are all tender, place under the high broil for a couple of minutes (watching closely) to brown the tops of the cauliflower florets. Enjoy!
