I had a lot of fun coming up with this recipe and it came out spoon-lickingly good. Most kids love to dip fruit slices into sugar-sweetened yogurt, so this recipe was my dairy-free, sugar-free version. It took a lot of self restraint to stop eating this dip long enough to snap a picture, and I ended up taking a few bites in between . . . heehee.
The genius of this recipe, in my opinion, is the freeze dried strawberries. I love using freeze dried fruit to create wholesome versions of kid-favorite treats because it’s easy to pulse into a convenient powder, it has stunning natural color, and it contains natural sweetness, instead processed sugar. If you love strawberry yogurt but can’t stomach dairy and want to limit your sugar intake, give this recipe a try. It’s super quick and really, really tasty.
Note: Another fun snack to make for the kids using freeze dried fruit is my wholesome recipe for Fun Dip. Peel and slice jicama into sticks. Grind 1 cup of freeze dried fruit in a food processor until it becomes a ne powder. Pour the dip into individual bowls, or ziplock bags, and serve with a handful of jicama sticks for dipping and licking. Yum!
½ cup freeze dried strawberries
1 can (13.66oz) coconut milk, full fat
1 teaspoon vanilla extract
2 Bananas
¼ teaspoon almond extract
1 tablespoon arrowroot starch
2 apples
2 Pears
Combine all of the ingredients in a food processor. Blend until smooth. Chill before serving. Enjoy!
