This recipe for Low Carb Passion Fruit Loaf is my way of making sweet bread without the guilt. It’s also a wonderful way to use fresh passion fruit pulp, which I have a lot of lately! The protein powder adds sweetness and enhanced vanilla flavor, while bringing a nice dose of quality protein. Spread some Roasted Fig Puree on a slice and you’ll be in summer fruit heaven 🙂
- Preheat the oven to 350 degrees F. Generously grease a loaf pan with coconut oil.
- In a medium bowl combine the protein powder, flax meal, coconut flour, baking soda, salt, stevia and cinnamon. In another medium bowl combine the water, oil, vinegar, passion fruit and eggs.
- Add the wet ingredients to the dry ones, mix until fully combined. Transfer the dough to prepared load pan, smooth out the top.
- Bake for 40 minutes, until golden on the top and cooked through. Slice and enjoy warm!
