Low Carb Passion Fruit loaf RecipeI love baked goods and sweet things…probably a little too much! There’s such joy and comfort when the house is filled with the aroma of sweet things baking.

This recipe for Low Carb Passion Fruit Loaf is my way of making sweet bread without the guilt. It’s also a wonderful way to use fresh passion fruit pulp, which I have a lot of lately! The protein powder adds sweetness and enhanced vanilla flavor, while bringing a nice dose of quality protein. Spread some Roasted Fig Puree on a slice and you’ll be in summer fruit heaven 🙂

I use Jay Robb Egg White Protein and recommend Biotrust if you prefer whey protein.

Here are two other ways that I’m using up my fresh passion fruit…Passion Fruit & Mango Sorbet and Passion Fruit Protein Mousse. Yum, yum and yum!

  1. Preheat the oven to 350 degrees F. Generously grease a loaf pan with coconut oil.
  2. In a medium bowl combine the protein powder, flax meal, coconut flour, baking soda, salt, stevia and cinnamon. In another medium bowl combine the water, oil, vinegar, passion fruit and eggs.
  3. Add the wet ingredients to the dry ones, mix until fully combined. Transfer the dough to prepared load pan, smooth out the top.
  4. Bake for 40 minutes, until golden on the top and cooked through. Slice and enjoy warm!

    The direction say to combine water, oil, egg etc. the ingredient list doesn’t have oil on it. How much oil and what kind? Recipe sounds yummy.

    What exactly is “passion fruit pulp” – where can I find it?

      Hi Kendra,
      Passion fruit pulp is the stuff that inside of a passion fruit. So you’d purchase about 6 whole passion fruits, then cut each one in half and scoop the pulp out. Use the seeds and all, everything that you can scoop out. The seeds have a fun crunch to them!
