Here’s a side dish that’s quick to throw together and goes great with Tuna Cakes. Cabbage, apple and onion are a tasty combination that are filled with fiber and vitamins.

I love the color of red (purple) cabbage! Any food with this much vibrant, natural color must be really good for you, right?


Serves 8

1 tablespoon coconut oil

1 large yellow onion, thinly sliced

1 small head red cabbage, thinly sliced

3 tablespoons apple cider vinegar

2 apples, cored and thinly sliced

½ teaspoon sea salt

½ teaspoon dried rosemary

½ teaspoon Dried Thyme

dash of black pepper


Directions

In a large skillet, place the oil over medium heat.

Add the onion and sauté for 3 minutes. Add the cabbage and sauté for 5 minutes.

Add the remaining ingredients, mix well and continue to sauté until tender.
