Sweet Potato Pancakes
This is a fun twist instead of plain-old-pancakes. My kids are always excited about pancakes, and these never disappoint.
Here’s what you need:
- 3/4 cup pureed or canned sweet potato (I use Trader Joe’s organic canned sweet potato)
- 2 Tablespoons canola oil
- 3/4 cup rice milk
- 1/2 cup filtered water
- 2 teaspoon apple cider vinegar
- 2 Tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup whole wheat pastry flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2Â teaspoons ground cinnamon
- 1/4 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- In a large bowl, mix the sweet potato, oil, milk, water, vinegar, maple syrup, and vanilla. Add the flour, baking powder, salt, cinnamon, ginger and nutmeg. Mix until smooth.
- Heat your griddle and spray with nonstick spray before cooking pancakes 1/2 cup at a time (about 3 minutes first side and 1 minute second side.)

I made these pancakes yesterday, topped them off with maple syrup & chopped pecans and they were delicious! Had a couple left over and they were just as moist today.
Look forward to trying others on your site, starting with Everything Cookies & Zucchini Muffins! Thanks for doing the research for us! Teri
