Sweet Potato Pancakes

Feel free to use pumpkin instead of sweet potato, either way they taste amazing

This is a fun twist instead of plain-old-pancakes. My kids are always excited about pancakes, and these never disappoint.

Here’s what you need:

  • 3/4 cup pureed or canned sweet potato (I use Trader Joe’s organic canned sweet potato)
  • 2 Tablespoons canola oil
  • 3/4 cup rice milk
  • 1/2 cup filtered water
  • 2 teaspoon apple cider vinegar
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  1. In a large bowl, mix the sweet potato, oil, milk, water, vinegar, maple syrup, and vanilla. Add the flour, baking powder, salt, cinnamon, ginger and nutmeg. Mix until smooth.
  2. Heat your griddle and spray with nonstick spray before cooking pancakes 1/2 cup at a time (about 3 minutes first side and 1 minute second side.)

    I made these pancakes yesterday, topped them off with maple syrup & chopped pecans and they were delicious! Had a couple left over and they were just as moist today.
