Yes, it seems like a magic trick, but somehow this mouthwatering pizza contains just 6% carbs! This comes to only 7 grams of carbs per serving. How is this possible? The secret is in the crust, of course. We swapped out the flour for straight-up, raw, chicken thigh. Now, I do not blame you if you’re feeling skeptical about this move, I certainly wasn’t sure that it would work either. But boy, oh boy, does it ever work! 

My two teenagers are the best judge of whether or not one of my recipe creations is a winner, and they both went crazy for this low carb, high protein version of their favorite pizza. Not only did the entire family love this pizza, no one could figure out what the crust was made out of. While it’s clear that it’s not a traditional crust, it is not obvious that it’s made with meat, cheese, and egg. I think it tastes a bit like a seasoned breakfast sausage patty. So delicious! 

Feel free to use your favorite sauce and toppings for your Meatzza creation! Just watch out for hidden sugars in sauces. I used Primal Kitchen BBQ sauce which is very low in sugar and carbs.

Serves 4
Pizza Crust

1 pound boneless, skinless chicken thighs

2 eggs

½ cup mozzarella, shredded

¼ cup parmesan cheese, shredded

1 teaspoon dried italian seasoning

½ teaspoon sea salt

BBQ Chicken Pizza Toppings

½ cup natural BBQ sauce ( avoid ones with added sugars)

⅔ cup mozzarella, shredded

⅔ cup smoked gouda, shredded

1 cup cooked, shredded chicken

1  small red onion, thinly sliced

¼ cup fresh cilantro, chopped

a drizzle of ranch dressing (optional!)

Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.

Combine all of the crust ingredients in the food processor until the chicken is fully ground and the ingredients are fully combined. Place the chicken dough in the center of your pan and spread into your desired pizza crust shape. Bake for 20 minutes in the preheated oven. Increase the oven temperature to 500 degrees F.

Load up your crust with the sauce and toppings. Place back in the oven for 5-8 minutes, until your cheese has melted and toppings are warmed. Drizzle with ranch. Serve immediately.


Quick Tip

To shape your pizza crust, place a piece of parchment paper on top of the dough, and use your hands to spread the dough out into a large pizza shape. Remove the top layer of parchment paper and discard it before placing the crust into the oven.
