I love a good slow cooker recipe, and this one is in my top 5. It feels almost too easy, since the time you invest is about 10 minutes, and then dinner turns out amazingly tender and savory. This recipe is way too good not to try, so what are you waiting for?

Quick Tip: You could easily serve this pulled pork on large lettuce leaves rather than Fluffy Egg White Biscuits. It’s delicious both ways!

INSTRUCTIONS

  1. Combine the olive oil, BBQ Sauce, vinegar, Dijon, chili powder, onion, garlic cloves, dried thyme, and chicken broth in a bowl.
  2. Place the shoulder roast in a slow cooker. Cover the roast with the BBQ Sauce mixture. Cover and cook on high for 5 1⁄2 hours.
  3. Remove the pork from the slow cooker. Gather a plate and 2 clean forks. Use the forks to shred the tender pork and separate and discard pieces of fat. Assemble sandwiches with shredded pork and BBQ Sauce. Enjoy!
