Here’s a flavorful and nutritious way to enjoy pumpkin…

Do you want to know something really cool? It’s something that I’ve stumbled upon after years of experimenting in the kitchen and poring over nutrition books and cookbooks. Here it is: Any food can be turned into something wholesome, nutritious, and delicious. ANY FOOD!

It was this way of thinking that earned me the name of “The Recipe Hacker” and it’s the philosophy that I live and eat by.

Take this recipe for Pudding as an example…normally pudding is served as a dessert that’s filled with simple sugars, unhealthy fats, dairy and even food coloring. Sure it tastes delicious, but there’s no substantial benefit to eating it, other than for fun and flavor. I had to challenge this antiquated concept of pudding by asking the question, “Why can’t pudding be delicious, fun, flavorful and packed with wholesome, nutritious, usable calories?”

The answer: It CAN! (and in my humble opinion it SHOULD)

This recipe for creamy, dreamy, sweet and pumpkin-y pudding is made with pureed pumpkin, coconut milk, carrots, chia seeds and a touch of pure maple syrup for wholesome sweetness. It’s everything you could ask for in a pudding…and more 🙂

Pumpkin Chia Seed Pudding

Serves 8

  • 1 (15 oz) can pumpkin
  • 1 (13.66 oz) can coconut milk, full fat
  • ⅓ cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • pinch of ground cloves
  • dash of sea salt
  • ¼ teaspoon vanilla extract
  • 2 carrots, sliced and steamed
  • ½ cup chia seeds

  1. Combine all of the ingredients, except the chia seeds, in a food processor or high speed blender. Blend until very smooth and the little carrot pieces have disappeared, turning the mixture a bright orange color.
  2. Pour the pumpkin mixture into a medium sized bowl. Mix in the chia seeds. Set aside for 20 minutes, then cover with plastic wrap and chill for another 20 minutes before serving. Store in the fridge.
