What could be more gorgeous or flavorful than a cup of chopped, organic, fresh, ripe fruit mixed with fresh mint leaves? It doesn’t get any better, or tastier than this!
The key to making this dish both visually appealing and enjoyable to eat is to chop the fruit in uniform pieces. It doesn’t have to be perfect, but do your best to make the pieces similar in size.
I made this one back in August, so you’ll notice these are mainly summer fruits. Mint pairs well with any fruit, so feel free to sub in whatever is fresh and available for you today.
Another quick and tasty way to serve up fruit is to leave out the mint and mix in fresh ground cinnamon and a sprinkle of sliced almonds and/or chopped dates. For this version I like to use apples, pears and peaches. Enjoy!
1 small watermelon, chopped
1 cantaloupe, seeded and chopped
1 Mango, pitted and chopped
1 cup fresh blueberries
1 cup fresh mint, minced
Chop the fruit into small, uniform cubes. Combine all of the ingredient together in a large bowl, then scoop into small cups. Enjoy!
