Here’s a fun, real food snack that you’ve got to try…popped quinoa seeds!
Quinoa is often mistaken for a grain, but it’s actually a seed. This little nutritional-powerhouse is filled with protein, fiber, iron and other vitamins and minerals. Most often recipes will have you cook quinoa in water, resulting in a soft, rice-like substance, but now I have a much more exciting way to prepare quinoa!
½ cup uncooked quinoa
Seasonings of your choice (Try it with some Tajin!)
Rinse the quinoa under cold water for 2 minutes. Use either a mesh colander or cheesecloth to keep the quinoa from going down the drain.
Spread the rinsed quinoa out over a baking sheet. Place in the oven at 100 degrees F for 60 minutes, or until the quinoa is completely dried. If your quinoa has any moisture left it may not pop.
Heat a skillet over medium-high heat. Transfer a few Tablespoons of the quinoa into the heated skillet and wait for it to start popping! Use a lid to reduce the number of quinoa seeds flying across your kitchen. Once the popping dies down, remove from heat.
Repeat with the remaining quinoa. Season as you would popcorn. Some salt and a dash of Tajin is my favorite way!
