What makes sweet potatoes healthier than white potatoes? For starters, they are loaded with antioxidants, beta-carotene, vitamin C and more. What makes the biggest difference between sweet potatoes and their white cousins is that sweet potatoes have a lower glycemic index, which means your blood sugar will not spike as quickly after eating them.
