Here’s a stunning way to serve up sweet potatoes. A mixture of orange and purple, thinly sliced into rounds, tossed with olive oil, garlic and fresh thyme then roasted to sweet, tender perfection.

What makes sweet potatoes healthier than white potatoes? For starters, they are loaded with antioxidants, beta-carotene, vitamin C and more. What makes the biggest difference between sweet potatoes and their white cousins is that sweet potatoes have a lower glycemic index, which means your blood sugar will not spike as quickly after eating them. This keeps you full longer and discourages fat storage.

This is a great dish to serve at a summer BBQ. The fresh thyme and garlic make these roasted sweet potato rounds amazing.


Serves 8

2 orange sweet potatoes, peeled and cut into thin rounds

2 purple sweet potatoes, peeled and cut into thin rounds

2 tablespoons olive oil

4 garlic clove, minced

¼ cup fresh thyme

½ teaspoon sea salt


Directions

Preheat the oven to 450 degrees F. Lightly grease a baking dish with olive oil.

In a large bowl combine all of the ingredients together. Toss until evenly coated.

Spread the sweet potato rounds onto the prepared baking dish in a single layer. Bake for 40 minutes, or until tender and golden.
