About

Before I started eating only real, wholesome and unprocessed foods I used to occasionally snack on a salty bag of fried plantain chips.

You know the ones — fried in vegetable oil and doused in salt and preservatives. Not what you’d call very healthy, although quite tasty.

These days I do not eat packaged snack, as a part of my commitment to eat only real food in 2013. So when I walked past a pile of plantains at the market I had the bright idea to create my own crunchy snack, baked and not fried.

This recipe is sooooo simple, and the result is a delicious, sinfully crunchy snack.


Serves 6

3 large green plantains

1 Lemon

sea salt

black pepper

1 tablespoon olive oil


Directions

Preheat the oven to 350 degrees fahrenheit. Line a baking sheet with parchment paper.

Peel the plantains and use a mandolin slicer to thinly slice.

Place the plantains in a bowl and add the olive oil, the lemon juice and then season with sea salt and pepper and mix well.

Arrange in a single layer on the prepared baking sheets. Bake for 30 minutes, or until golden and crisp.
