You knew this was coming…

With all the 5 minute mug cake recipes floating around Pinterest, it was just a matter of time before I got my hands on one to swap out the empty calorie ingredients for wholesome stuff.

One of the more popular mug cake recipes is made with Nutella, white flour, white sugar and vegetable oil…tasty, but whoa boy that’s a lot of empty calories. One serving of that recipe has over 1,000 calories and 93 grams of fat! (emoji horrified face)

This recipe is made with ingredients that all have something to offer nutritionally, so while your sweet tooth is being satisfied your body is also being nourished

Now keep in mind that this is a recipe for chocolate cake — the ingredients are wholesome, but it’s still cake! Enjoy in moderation 🙂

  1. In a microwave safe mug, combine the almond meal, coconut palm sugar, and cocoa powder. Mix well, until all the lumps are gone.
  2. Add the whisked egg and mix. Add the coconut milk, coconut oil and vanilla extract. Mix well. Add the chocolate chips.
  3. Microwave on high for 3 minutes.
  4. Serve immediately!

    Greetings from Venezuela..! I’ve enjoyed many recipes from your website. As a Vegetarian, I found all your recipes unique, healthy and delicious. I have a question… Due to economic situation in my country, it’s hard to find some of the ingredients at supermarkets, what can you suggest me to use instead of coconut milk, coconut flour, coconut sugar and coconut oil?

      Hi Luis,

      Below are some substitutions for coconut:

      Coconut Oil : Healthy plant fats (olive oil, avocado oil, macadamia nut oil, or red palm oil). Avocado oil is especially good if you want something without a strong taste of its own.

      Coconut Flour:
      For baking or breading, try: almond flour, hazelnut flour, or any other nut flour. (Not subbed 1:1 however)
      For thickening sauces, try: tapioca starch or arrowroot powder.

      Coconut palm sugar: Raw honey, molasses, pure maple syrup, date sugar, ground dates or stevia

      Coconut flakes:
      As a sweet, chewy ingredient: raisins, dried cranberries, or other dried fruit.
      For crunch on top of a salad: sunflower seeds, flax seeds, crumbled nut topping or dehydrated blueberries (or other berries).
