Easy cabbage salad recipe

This salad is light and refreshing.

The simple, bold, flavors of mint, garlic and lemon make this cabbage salad something special.

My favorite part of making this salad is the taste testing.

At any family gathering you’ll find the ladies in the kitchen, gathered around a huge bowl of cabbage salad. Add some more lemon. OK, now how does it taste? More garlic. OK, how about now? Another sprinkle of mint. Yum…perfection!

INGREDIENTS
Serves 6

  • 1 head green, organic cabbage, shredded
  • ⅛ cup crushed, dry mint leaves
  • ⅛ cup fresh squeezed lemon juice
  • 4 garlic cloves, finely minced
  • 1 teaspoon olive oil
  • Dash of salt
INSTRUCTIONS

  1. Wash the shredded cabbage and place in a medium sized bowl.
  2. In a small bowl combine the remaining ingredients. Pour over the cabbage and mix well.
  3. Taste test and play with adding more of whatever seasoning seems lacking!
