Guilt-free apple pie that’s ready in 5 minutes – say what?!?

I can’t believe that I left this dessert recipe off my Top 10 Healthy Desserts post! Though it’s not fancy at all, this is the dessert that I make more often than any other recipe. At least once a week the kids will ask for dessert, as they are eating dinner, and my answer is always, “Eat all your dinner and I’ll make Skillet Apple Pie!”

Growing up in Skagit County, a small community in the northwest corner of WA state, apples were thoroughly a part of the culture. There were apple trees in nearly everyone’s yard and down the street from my childhood home there was a quaint apple farm with rows of apple trees overlooking Padilla bay. I had a bag of sliced apples in my lunch everyday and we had a framed needlepoint stating, “An apple a day keeps the doctor away” in our living room. (Funny since my dad is a doctor – lol!) Spiced apple cider was served at holiday parties and our neighbors would bring over homemade cinnamon-sugar dried apples. It’s really no wonder that to this day, living in sunny southern California, the fruit drawer in my fridge is always overflowing with apples.

What’s so fun about this Skillet Apple Pie recipe is that you can throw in whatever you want, in whatever amounts you want. I love just throwing stuff in at will! The instructions below are a great place to start, but feel free to add more cinnamon or nutmeg, or a little coconut sugar if you want to increase the sweetness. Also it’s great to throw in extra chopped nuts if you have those on hand, or some chopped pears or other firm fruit. Have fun, go with your instincts and enjoy!

Serves 5

1 teaspoon coconut oil

3 apples, chopped

1½ teaspoons ground cinnamon

dash of sea salt

dash of ground nutmeg

4 Dates, chopped

¼ cup ground pecans


Directions

Place the coconut oil in a skillet over medium heat.

Add the apples and all of the remaining ingredients and cook, mixing often, until very tender. Serve immediately. Enjoy!
