I love really simple recipes that come loaded with flavor — like this Firehouse Sweet Potato Hash. It doesn’t get much more simple than these 6 ingredients and the result is truly spectacular. This is a recipe to make time and time again.

Why is called Firehouse Sweet Potato Hash? B made a stop in Columbus, Ohio a couple of weeks ago to visit his friend, and bomb squad captain, Bobby V. It was a Sunday night and down at the firehouse that’s steak night. B was excited to join the guys around the table for a full steak meal with all the trimmings…including a very tasty sweet potato hash. B asked the guys for the recipe, and turns out it was a combination of butter, cajun spice and brown sugar that made the hash come out so flavorful. He took some notes and brought it home for me to hack.

It’s not easy hacking a recipe that you’ve never tasted, but these flavors fell together really effortlessly. We have already enjoyed this dish twice in the past two weeks — it’s sure to become a weekly staple around here. Give it a shot and let me know what you think


Serves 6

2 sweet potatoes

2 yellow onions

3 tablespoons coconut butter

1 tablespoon Cajun seasoning blend

1 teaspoon sea salt

3 tablespoons coconut palm sugar


Directions

Wash and peel the sweet potatoes. Slice each sweet potato in half lengthwise and widthwise. Slice each piece in half lengthwise again, then slice into ¼ inch slices.

Slice the onions into quarters, and then slice thinly.

Place the coconut butter in a large skillet over medium high heat. Add the sweet potato and onions to the skillet. Sprinkle with the cajun seasoning, sea salt and coconut sugar. Mix well and cook for 10 minutes.

Reduce the heat to low, cover and cook for 12 minutes. Remove the cover, increase the heat to medium high, and cook until the potatoes are tender and caramelized. Enjoy!
