You know I’m busy when I resort to making tuna salad for dinner…

I have a big (exciting!) project in the works that I can’t wait to share with you! It’s been taking up my every waking minute lately, so we’ve been having many a tuna dinner.

Tuna is one of those things that can be ready in 10 minutes flat, and with the right added ingredients, tastes fantastic. It’s loaded with protein and the fresh ingredients bring fiber, vitamins and minerals. Win, win, win.

I really love adding fresh fruit to tuna salad. The contrast between salty tuna and sweet, crunch fruit is divine.

No need for gloppy mayonnaise or even plain yogurt. In this recipe I dress the salad very simply with coconut oil, dijon mustard, salt and pepper. Try it out and let me know what you think 


Serves 4

1 Green Apple, choppped

2 Green Onions, tops only, chopped

¼ cup fresh parsley, chopped

2 cans (5 oz) albacore tuna, in water (drained)

1 tablespoon dijon mustard

¼ cup coconut oil, melted

¼ cup Red Grapes, halved

sea salt and black pepper to taste


Directions

Mix all of the ingredients in a large bowl and serve immediately. I like to serve this salad in large butter lettuce leaves, or scooped onto avocado halves. Enjoy!
