Believe it or not, but you can make a tasty pizza crust using a head of cauliflower! Pretty amazing, right?

I had heard about recipes like this, but when I did some research I was disappointed to find that cheese was a main ingredient in most cauliflower crusts. While I do use cheese on occasion in my cooking, it’s used in very small quantities as a condiment and not as part of the main ingredients. I like to have the option to completely leave out dairy without the integrity of the dish suffering.

So I did some experimentation and came up with this recipe which has no dairy in the crust – it turned out really delicious! You’ll want to use a fork to eat this pizza, since the crust doesn’t turn out as strong as traditional pizza crust, but the flavor and the health benefit to this crust can’t be beat.


Serves 4

1 head cauliflower

1 tablespoon olive oil

2 eggs

¼ cup blanched almond flour

2 tablespoons nutritional yeast

½ teaspoon garlic powder

sea salt and black pepper

1 teaspoon Dried Oregano

Preheat the oven to 350 degrees F.

Cut the cauliflower into small pieces. Run through a food processor with the grating attachment to shred it into very small pieces.

Heat the olive oil in a large skillet. Sauté the shredded cauliflower for 5 minutes, until soft.

Using a blade attachment, puree the cauliflower, eggs, almond flour, nutritional yeast, garlic powder, a dash of salt and pepper, and the oregano. Blend until smooth.

Line a baking sheet with parchment paper. Lightly grease the paper with olive oil. Drop the dough into the middle of the pan. Use your hands to spread the dough into a large pizza crust shape. Bake for 35 minutes, or until brown.

Spread pizza sauce over the crust and add your favorite toppings. Return to the oven for 10-15 minutes. Serve warm and enjoy!
