To a child, Christmas is a time of pure magic.

The fun decorations, twinkling lights, boisterous gatherings with friends and family, baking and decorating cookies, and the tickle of excitement in their tummy on Christmas eve.

As an adult, the magic begins to fade as obligations and responsibilities fill our minds. The decorations, lights, holidays meals and gifts become items on the to-do list.

And yet Christmas magic persists.

It shows up in a sweet, unexpected gesture by a friend. We catch a glimpse of it when witnessing our child do a selfless act. And we feel its warm glow in the embrace of a kind soul.

I’ve come to realize that Christmas magic has another name.

Love.

This Christmas may we show love to those around us and openly receive love from our abundant universe.

A time-tested way of showing love is to share homemade soup.

This Cold Day Chicken Soup is extra special as it doesn’t contain any high-carb ingredients like noodles or potatoes, like most do.

Enjoy and allow this simple, nourishing meal warm you from the inside out.


Serves 8

1 tablespoon coconut oil

1 medium yellow onion, chopped

3 carrots, grated

2 celery stalks, finely chopped

1 tablespoon Curry Powder

2 cloves fresh garlic, crushed

2 quarts chicken broth

3 cups roasted chicken, diced

1 bay leaf

1 apple, chopped

dash of sea salt

dash of black pepper

½ teaspoon Dried Thyme

zest from 1 Lemon

2 cups (13.66oz) coconut milk, full fat


Directions

In a large pot, over medium heat, melt the coconut oil and add the onion, carrots and celery. After 5 minutes add the garlic and curry powder.

After a couple minutes add the chicken broth, chicken, bay leave, apple, pepper, thyme, and lemon zest. Stir well. Bring to a simmer and cook for 40 minutes.

Stir in the coconut milk, and some salt if desired, remove the bay leaf and serve.
