B and I just started watching the HBO show The Sopranos last month and are officially hooked. Don’t know how we missed this show when it aired 10 years ago!

The premise of the show is that Tony Soprano, a mobster, is passing out from anxiety attacks and starts seeing a psychiatrist to learn how to deal with his stressful life. Of course he can’t be specific with his problems since they are of a….sensitive nature.

After watching a day in the life of Tony, you can’t help but think that your own problems are small potatoes — his own mother tries to get him whacked!!

In each episode the characters down plate after plate of pasta with heaping sides of bread. I’ll be honest, all those carbs look pretty tasty.

So I’ve been baking almond bread and eating spaghetti squash


Serves 30

5 cups blanched almond flour

1 teaspoon baking soda

½ teaspoon sea salt

1 teaspoon ground cinnamon

6 eggs

2 tablespoons raw honey

2 teaspoons apple cider vinegar

⅓ cup golden raisins

½ cup Walnuts, ground

1 tablespoon ground cinnamon


Directions

Preheat oven to 300 degrees F. Grease a loaf pan with coconut oil.

In a medium sized bowl combine the almond flour, baking soda, salt and cinnamon.

In another bowl combine the eggs, raw honey and vinegar. Mix well.

Pour the wet ingredients over the dry and mix until just combined. Mix in the raisins.

In a small bowl combine the ground walnuts and cinnamon.

Generously cover a cutting board with almond flour. Place the dough on the floured surface and carefully pat out into a large rectangle, about an inch thick, with a length that matches the length of your loaf pan. Evenly cover the dough with the walnut and cinnamon mixture.

Carefully, using extra almond flour as needed, roll the dough up (keeping the same length as your loaf pan), then use a spatula to lift the rolled dough and drop into the loaf pan.

Bake for 45-60 minutes, until a toothpick comes out clean. Allow to cool in the pan for 30 minutes.
