Lots of things in life are totally awesome, but end up doing more harm than good.

Fried foods, lazy afternoons, multiple glasses of wine, cake and ice cream. More than a little and you’re in serious trouble.

Then there are the things that kind of suck, but lead to a higher quality of life.

Doing burpees, waking up early to be productive, giving up soda, passing on processed and refined foods, and practicing diligent time management. Not always easy to do, though always rewarding.

It would be a lot simpler if everything appealing was good for you and anything difficult was bad. I guess that would make life too easy.

Here’s a delicious treat that is both good for you and tastes amazing. Dark chocolate is filled with antioxidants and other beneficial properties. Couple that with sliced almonds and a sprinkle of toasted coconut and you’ve got yourself a splendid treat.

Feel free to change up this recipe by trying it with different types of nuts. Pistachios are really good!

Of course enjoy this yumminess in moderation…


Serves 20

20 oz. dark chocolate, 72% or higher cocoa content

½ teaspoon almond extract

1 cup sliced almonds

½ cup unsweetened shredded coconut, lightly toasted


Directions

Line a tray with wax paper, making sure that it will fit into your freezer.

Lightly toast the coconut in a small skillet over low heat. Set aside.

Gently melt the chocolate in a double boiler. Mix in the almond extract and sliced almonds. Spread the mixture over the prepared sheet. Evenly sprinkle with coconut.

Place in freezer for 30 minutes. Break into pieces.
