Cheesy Meat & Potato Casserole

Let’s face it. There are just some days when salads and fresh veggies aren’t enough — especially if you’re new to animal-free eating. This casserole is hearty and satisfying, without the cholesterol and saturated fat!

Cheesy Meat & Potato Casserole

For the potato layer:
  • 3 baking potatoes
  • 1 Tablespoon olive oil
  • 1 Tablespoon sweet paprika
  • Dash of freshly ground sea salt
For the tofu layer:
  • 2 (12 oz) packages firm tofu
  • 3 garlic cloves, minced
  • 2 Tablespoons soy sauce
  • 2 teaspoons olive oil
  • 1 Tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • Dash of salt and pepper
  • ¼ cup nutritional yeast
For the tempeh layer:
  • 8 oz tempeh
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 Tablespoon soy sauce
  • 1 teaspoon olive oil
  • 1 Tablespoon lemon juice
  • 1 teaspoon fennel seed, crushed (don’t leave this out — it adds amazing flavor!)
  • 2 teaspoons dry rubbed sage (not powdered)
  • Dash of freshly ground pepper
For the cheese sauce:
  • ½ cup nutritional yeast
  • ½ cup garbanzo flour
  • 1 teaspoon garlic salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon turmeric
  • 2 cups unsweetened rice milk
  • 2 Tablespoons olive oil
  • 1 teaspoon Dijon mustard

  1. Preheat the oven to 350 degrees. Lightly grease an 11×13 inch baking pan with olive oil.
For Potato Layer:
  1. Peel and slice the potatoes width wise into ¼ inch thick slices. Spread the potatoes over the bottom of your prepared pan, it’s ok to overlap. Drizzle the olive oil and sprinkle paprika and salt. Mix until evenly coated. Bake for 30 minutes as you prepare the other layers.
For Tofu Layer:
  1. Squeeze the tofu to release excess water. In a medium sized bowl mash the tofu. Add the remaining tofu layer ingredients and mix well. Once the potatoes are done, spread the tofu mixture evenly over the potatoes and press firmly down.
For the Tempeh Layer:
  1. In a small bowl, crumble the tempeh into small pieces. Add the remaining tempeh layer ingredients and mix well. Sprinkle over the tofu layer. Bake for 30 minutes.
For the Cheese Sauce:
  1. Mix the rest cheese sauce ingredients in a medium saucepan. Bring to a boil, mixing often. Once the mixture is thick and cheesy remove from heat.
  2. Allow casserole to cool slightly before serving. Spoon or drizzle cheese sauce over individual casserole servings and enjoy!
