Red Quinoa & Falafel Dinner (Gluten Free)
This dish is perfect for a nutritious summer dinner. I found the red quinoa at Trader Joe’s and the falafels at Costco. Serve it up with a heaping spoonful of hummus.
Here’s what you need:
- 1 cup red quinoa
- 2 cups vegetable broth
- 1 teaspoon olive oil
- 4-5 small onions, or 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 ears corn, kernels cut off
- salt & pepper
- 12 falafels
- hummus

Preheat the oven to 375 degrees.
- In a medium pot combine the quinoa and vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for 10 minutes.
- In a medium saucepan heat the olive oil, then add garlic and onions. Sautee until soft.
- In a bowl combine the cooked quinoa, onion mixture, corn and season with salt and pepper.
- Place the falafels on a baking sheet and cook for 10 minutes.
- Serve with a large spoonful of hummus.
