Red Quinoa & Falafel Dinner (Gluten Free)

This dish is quick and delicious

This dish is perfect for a nutritious summer dinner. I found the red quinoa at Trader Joe’s and the falafels at Costco. Serve it up with a heaping spoonful of hummus.

Here’s what you need:

  • 1 cup red quinoa
  • 2 cups vegetable broth
  • 1 teaspoon olive oil
  • 4-5 small onions, or 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 ears corn, kernels cut off
  • salt & pepper
  • 12 falafels
  • hummus

 

  1. Preheat the oven to 375 degrees.
  2. In a medium pot combine the quinoa and vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for 10 minutes.
  3. In a medium saucepan heat the olive oil, then add garlic and onions. Sautee until soft.
  4. In a bowl combine the cooked quinoa, onion mixture, corn and season with salt and pepper.
  5. Place the falafels on a baking sheet and cook for 10 minutes.
  6. Serve with a large spoonful of hummus.
