Pasta in a Flash
When the kids are hungry and you’ve no plans for dinner, simply throw this pasta dish together rather than heading for a drive thru. You won’t miss the sauce with this made-in-a-flash dish. The fresh veggies coupled with ground salt and pepper add delicious flavor. My kids can’t get enough of this stuff.
Here’s what you need:
- Organic 100% Whole Wheat Fusilli
- Cold pressed olive oil, just a drizzle
- Freshly ground salt and pepper
- 1 ear corn, uncooked, kernels shaved off
- 1 tomato, chopped
- 1 avocado, chopped
- 1/4 cup sun dried tomatoes, chopped
- 1/3 cup chopped olives, any variety
- *Optional* drizzle of Italian salad dressing
- Cook the fusilli according to the package. Drain, rinse and place in a large bowl.
- Add the remaining ingredients and toss in the bowl until well combined.
