Oatmeal-Banana-Chocolate Chip Waffles

Because sometimes you feel like dessert for breakfast...

These waffles are a big hit with the kids – and I’m happy to know that each bite is packed with lots of vegan fiber! Make them anytime that your sweet tooth starts acting up in the morning.

Here’s what you need:

  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup Old fashion oats (don’t use the quick-cooking oats, go for the real deal)
  • 2 ripe bananas
  • 1 1/2 cups rice milk
  • 3 Tablespoons maple syrup
  • 3 Tablespoons canola oil
  • 3/4 cup non-dairy chocolate chips
  1. Preheat waffle iron according to manufacturer’s directions.
  2. In a mixing bowl sift the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Add the oatmeal and mix well.
  3. In another bowl, mash the banana. Add the rice milk, syrup and oil. Mix well. Add the wet ingredients to the dry ones and mix until just combined. Fold in the chocolate chips. Let the batter sit for a couple of minutes before cooking.
  4. Prepare waffles according to manufacturer’s directions. Serve with sliced bananas, extra chocolate chips and a drizzle of pure maple syrup.
