Scrambled Tofu & Spinach

Nothing says Vegan Breakfast like a plate of scrambled tofu

While I don’t include soy into my daily diet, once in a while a big plate of scrambled tofu really hits the spot. I especially like this version that includes spinach. Add whatever veggies you want — can’t ever have too many veggies.

Here’s what you need:

  • 1 Tablespoon ground cumin
  • 1 teaspoon dried thyme, crushed
  • 1/2 teaspoon turmeric
  • dash of freshly ground sea salt
  • 3 Tablespoons water
  1. Mix these ingredients together in a small bowl and set aside.
  • 3 garlic cloves, minced
  • 1 Tablespoon olive oil
  • 1 pound extra-firm tofu, drained
  • 1/2 cup nutritional yeast
  • 1 cup chopped spinach
  • dash of freshly ground pepper
  1. In a large pan saute the garlic and olive oil over medium heat. Add the tofu, breaking it into small pieces as you drop it into the pan. Saute for 10 minutes, stirring often. Tofu should be slightly browned.
  2. Add the blend of spices, mix. Add the nutritional yeast, pepper and spinach. Cook for another 5 minutes.

  2. This scrambled tofu was AMAZING! I just made it and I have to say I was skeptical of how it was going to taste but that totally shocked me. I am NOT a cook and have NO experience except grilled cheese really. So using all these spices are new to me but this was delicious. I can’t wait to tell all my clients. Thanks!
