Raw Quesadillas

Finally, a nutritious, guilt-free and delicious quesadilla!

This was the first recipe that I made in my dehydrator, and it blew me away! This recipe gives you the flavor and texture of a real quesadilla but without the drawbacks of dairy. Make the zucchini wraps in the morning, so they can be in the dehydrator for at least 6 hours.

Here’s what you need:

For the Zucchini Wraps:

  • 2 large zucchini
  • 1 1/2 cup golden flax meal
  • 2 teaspoons dried basil
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried oregano
  • 1 teaspoon sea salt
  • 2 cups filtered water
  • 2 cloves garlic

For the Quesadillas:

  1. Throw all the zucchini wrap ingredients into a high speed blender, blend until smooth.
  2. Spread over 4 trays in a dehydrator and dehydrate at 110 degrees for 6 hours.
  3. Remove the zucchini wraps from the dehydrator, spread with the raw cheese, and fold into a large quesadilla. Slice each quesadilla into 2 or 3 pieces.
  4. Serve with raw marinara for dipping, and sliced avocado.

    Get an Excalibur 9 tray — according to all the raw cookbooks this is the best dehydrator on the market. I’ve had mine for 2 weeks and love it!!!

    Thanks for the tips and the recipe. I tryin these at a healthfood store and could not get them to give the recipe. Thanks to the web I have it now. they are delicious.
