Incredible Raw Veggie Patties

These are awesome
I’ve pretty much lived off of veggie burgers since I became a vegetarian at age 12. Since experimenting with the raw diet, veggie patties are the number one thing that I’ve missed. This recipe is fantastic – these patties really satisfy. If you aren’t on a raw diet, feel free to grill these in a pan.
Here’s what you need:
- 1/4 cup raw walnuts
- 1/4 cup raw pecans
- 1/4 cup raw sun flower seeds
- 1/4 cup raw hemp seeds
- 1 cup flax meal, divided into 1/2 cups
- 2 Tablespoons raw sesame seeds
- 1/3 cup sun-dried tomatoes
- 1 Tablespoon fresh ginger, minced
- 2 cloves garlic, pressed
- dash of sea salt
- 3 carrots, chopped
- 1 stalk celery, chopped
- 1 zucchini, chopped
- 1/2 of a lemon, juiced
- 1 teaspoon water
- 1/2 cup dates, pitted and chopped
- 1 ear raw corn, kernels shaved off
- Place the nuts and seeds in a food processor and process until finely ground. Place in a large bowl and mix in 1/2 cup flax meal. Set aside.
- In a small bowl combine the remaining 1/2 cup of flax meal and the sesame seeds. Set aside.
- In the food processor blend the remaining ingredients until well combined. Empty the veggie mixture into the bowl of processed nuts, and mix with your hands until well combined.
- In two batches, return the mixture back into the food processor and pulse a few times until smooth.
- Form balls of the mixture and roll in the bowl of flax and sesame seeds. Flatten into patties.
