Raw Pistachio Cookies

Sometime you just need a cookie...raw diet or not
You didn’t think I was actually going to go 42 days without making cookies did you? Here is my first attempt at raw cookies! These little morsels will definitely cure your sweet tooth, and the pistachios provide an amazing energy boost.
Here’s what you need:
- 5 cups raw, shelled pistachios
- 2 cups pure maple syrup (or agave nectar)
- 1 Tablespoon Mesquite powder
- 1 Tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1 teaspoon freshly ground sea salt
- Grind the pistachios in a food processor until fairly smooth — small chunks of nuts are OK. Remove 1 cup of the ground pistachios from the food processor and reserve for later use.
- In a high speed blender mix the maple syrup, mesquite powder, cinnamon, nutmeg, ginger and salt. Turn on the food processor and slowly add the liquid mixture to the pistachios. Blend until fully combined.
- Place the pistachio cookie dough in the fridge for at least 1 hr. Remove from fridge and form small balls (it helps to dip your fingers in water to keep the dough from sticking) then roll each ball in the reserved ground pistachios.
- Store your cookies in the fridge.
