3 sauces make these wraps savory and delicious

These lettuce wraps are awesome — like a lettuce wrapped burrito. Make the sauces first, then throw together the veggie filling. The wraps will keep for a couple of days in the fridge.

Here’s what you need:

  • Large lettuce leaves
  • Spicy Raw Cheese Sauce
  • Green Sauce
  • Avocado Sauce
  • 3 Large carrots, shredded
  • 1 mango, seeded and chopped
  • 1 cup spinach, chopped
  • 1 small bunch cilantro, chopped
  • 2 green onions, chopped
  • 1 ear of corn, kernels shaved off
  • 1 Tablespoon olive oil
  • dash of sea salt and fresh ground pepper
  • 1 avocado, sliced
  1. In a large bowl combine the carrots, mango, spinach, cilantro, green onion and corn kernels. Toss with the olive oil and salt and pepper.
  2. To prepare each wrap: Place a lettuce leaf on a plate, spread on some raw cheese, green sauce and avocado sauce. Put a heaping scoop of the veggie filling, then top with avocado slices and more sauce.
