Marinated Bell Pepper Salad

This salad has beautiful color
One glance at these vibrant colors and you know that antioxidants abound. Bell peppers have amazing flavor that is intensified when marinated.
Here’s what you need:
- 4 bell peppers of different colors, sliced thin on a mandoline
- 1 lime, juiced
- 1 Tablespoon macadamia nut oil
- freshly ground salt and pepper
- Place the sliced bell peppers in a large bowl. In a separate bowl combine the lime juice, oil, salt and pepper. Pour the mixture over the bell peppers and stir until fully combined.
- Place in the fridge for 30 minutes before serving.
