Raw Coconut-Vanilla Ice Cream

Looks almost like the real thing!
Making raw ice cream was quite the experience. The end result is something that truly resembles ice cream — it’s cold, creamy and smooth. If you love coconut, then you’re in for a treat because it is rich with coconut flavor. If you’re not crazy about coconut (like me) then at least you’ll have fun eating something that resembles ice cream
Here’s what you need:
- 2 cups raw cashews, soaked at least 4 hours
- 1 small coconut, cracked open and peeled and broken into pieces
- 1 cup filtered water
- 3/4 cup raw agave nectar
- 2 Tablespoons vanilla extract
- dash of freshly ground sea salt
- 1/4 cup coconut oil, warmed to a liquid form
- In a high speed blender mix all of the ingredients except the coconut oil. Once everything is smooth, add the coconut oil and blend until fully incorporated.
- Chill in the fridge. Process in an ice cream maker.
Note: Since it took me 24hrs to get my ice cream maker working, I found that the ice cream base was almost like soft serve just from chilling in the fridge for that long. So if you want to skip the ice cream maker stage you’ll have a soft cream treat — just not one that would keep its shape as an ice cream ball.
