Spreadable Raw Cheese

It's tangy, creamy and satisfying
Who would have thought the Raw foods diet would include a cheese-like item? Granted you’re not going to mistake it for real dairy based cheese, but it is wonderful to have something smooth and tasty to put on things. This dish is also packed with calcium, from the raw sesame seeds.
Here’s what you need:
- 2/3 cup fresh squeezed lemon juice
- 3 cloves garlic
- 1/8 cup cilantro, leaves only
- 2 Tablespoons green onion
- Sea salt to taste
- 1 cup (8oz) raw tahini (ground sesame seeds)
- Put all of the ingredients, besides the tahini, in a high speed blender. Mix to combine, then pour the tahini in and mix until incorporated. Don’t over-mix — you want it to stay thick and creamy.
