Chai Chocolate Chip Cookies

Chai tea on the side and chai tea in the cookies -- yummmm!
This recipe was adapted from the cookbook Vegan Cookies Invade Your Cookie Jar (a must-have cookbook for anyone who is vegan and loves cookies…like me). I wasn’t sure how the chai would taste inside a cookie, and was pleasantly surprised. If you like the flavor of chai tea then give this recipe a whirl.
Here’s what you need:
- 1/2 cup nonhydrogenated vegetable shortening (EarthBalance)
- 1/2 cup nonhydrogenated vegan margarine, softened (EarthBalance)
- 1/2 cup organic powdered evaporated cane sugar
- 1/2 teaspoon vanilla extract
- 2 cups whole wheat pastry flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- Pinch of ground coriander and ground black pepper
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- contents of 1 chai tea bag (I used organic decaf)
- 1/2 cup 10 oz bag Enjoy Life Dairy Free Chocolate Chips
- Preheat oven to 350 degrees F and line two baking sheets with parchment paper.
- In a medium bowl cream together the shortening and margarine. Add the sugar and vanilla and beat until smooth.
- In a separate bowl mix together the dry ingredients. Add to the margarine mixture and mix until well combined. Fold in the chocolate chips, knead the dough until all the chips are incorporated.
- Form the dough into round cookie shapes, about 1/2 inch thick and place on prepared baking sheets. Bake for 12-15 minutes, until golden.
