Fisher Re-Mix

A fun once-a-year kind of treat
One Christmas, when I was a kid, our neighbors gifted us a sweet & salty, crunchy treat appropriately named ‘Fisher Mix’ (Fisher was their last name). We quickly got the recipe and Fisher Mix became synonymous with Christmas. This year I switched out all of the ingredients, and Fisher Mix became Fisher Re-mix, a more wholesome, 100% vegan snack.
Here’s what you need:

- 6 cups Health Valley Rice Crunch-Ems
- 6 cups Health Valley Corn Cruch-Ems
- 6 cups Barbara’s Bakery Organic Crispy Wheats
- 2 (8 oz) bags Newman’s Own Organics Salted Sticks
- 2 (16 oz) cans Emerald Lightly Salted Dry Roasted Peanuts (check the label, surprisingly lots of peanut brands contain corn syrup solids — which you do NOT want ruining your recipe! Some of the Emerald peanuts have corn syrup, so specifically look for the Lightly salted Dry Roasted, or any other brand that keeps the peanuts pure.)
- 3 cups Whizzers(these are the vegan equivalent to M&Ms and dairy free, gluten free, and free of artificial colors or preservatives)
- 30 oz Organica Vegan White Chocolate (this is about 8.5 bars)
- Line a large portion of counter top or tabletop with wax paper.
- Measure the cereals, pretzels and nuts into a very large bowl. Have the Whizzers in a small bowl nearby. Break the chocolate bars into small pieces and place in a microwavable bowl.
- Microwave the white chocolate in 30 second increments, stirring well after each segment, until it is fully melted and smooth (about 4 or 5 times).
- Immediately pour the melted chocolate over the cereal mixture. Fold the mixture with a large spoon, being careful not to crush the ingredients. Once most of the cereal is coated, throw the whizzers in and continue to mix until fully incorporated.
- Pour the mixture out onto the prepared wax paper, and spread evenly. Wait about 15 minutes until the chocolate has dried, then break into pieces. Store in airtight container.
*Note: Feel free to make a smaller portion than this! This is the size I make to share, so if you’re just making it for the family then do one half or even one third the portion.
I realize that these ingredients are on the pricey side, especially when compared to the standard version (AKA corn-syrup and dairy infused and processed version that you could find on the shelves of WalMart). I think there is something positive in this situation. It helps to appreciate wholesome, quality ingredients when you have to pay more for them. Also treats like this will be had as a once-in-awhile occasion, something to be savored and lingered over rather than shoveled in a hurry. Enjoy
