Savory Stuffing

Fresh herbs and crunchy nuts make this stuffing irresistible
I haven’t eaten turkey since I was twelve years old, but that hasn’t stopped me from enjoying delicious stuffing each year. This recipe tastes so amazing, it will cure you from ever making stuffing from a box again!
Here’s what you need:
- 6 cups whole wheat french bread
- 2 Tablespoons Earth Balance, nonhydrogenated vegan margarine
- 1 large yellow onion, diced
- 5 celery stalks, diced
- 3 large carrots, peeled and diced
- 1 Tablespoon fresh rosemary
- 1 Tablespoon fresh thyme
- 1 Tablespoon fresh sage
- 1/2 cup fresh parsley, chopped
- 1/4 cup golden raisins
- 1/2 cup walnuts, chopped
- 1/2 cup pecans, chopped
- 2 cups vegan vegetable broth
- salt and pepper to taste
- Preheat oven to 350 degrees.
- Dice the bread and spread it over 2 baking sheets. Bake for 15 minutes, until crisp.
- Warm the margarine in a saute pan. Add onion, celery and carrots. Cook until tender.
- Place the bread in a large bowl. Add the onion mixture, rosemary, thyme, sage, parsley, raisins, walnuts and pecans. Mix until fully incorporated. Drizzle with vegetable broth and toss gently. Season with salt and pepper.
- Bake in a casserole dish, uncovered for 40 minutes.
