This is a great quick vegetable recipe to have on hand for hurried weekday dinners. Zucchini is a wonderful vegetable to include in your diet — it is very low in calories and filled with vitamins and minerals. My kids love this recipe, so I often make it as a side dish for dinners.

Here’s what you need:

  • 2 teaspoons Earth Balance, nonhydrogenated vegan margarine
  • 2 cloves garlic, minced
  • 2 large zucchinis, washed and sliced
  • 4 large carrots, peeled and sliced
  • salt and pepper to taste
  1. In a large saute pan, place the Earth Balance over medium heat. Add the garlic and saute until slightly browned.
  2. Add the zucchini and carrots, mix well. Cover and cook for 15-20 minutes, until the veggies are easily pierced with a fork. Season with salt and pepper.
