Garlic Steamed Zucchini & Carrots

Tender and delicious
This is a great quick vegetable recipe to have on hand for hurried weekday dinners. Zucchini is a wonderful vegetable to include in your diet — it is very low in calories and filled with vitamins and minerals. My kids love this recipe, so I often make it as a side dish for dinners.
Here’s what you need:
- 2 teaspoons Earth Balance, nonhydrogenated vegan margarine
- 2 cloves garlic, minced
- 2 large zucchinis, washed and sliced
- 4 large carrots, peeled and sliced
- salt and pepper to taste
- In a large saute pan, place the Earth Balance over medium heat. Add the garlic and saute until slightly browned.
- Add the zucchini and carrots, mix well. Cover and cook for 15-20 minutes, until the veggies are easily pierced with a fork. Season with salt and pepper.
