Nutritious party in a bowl

I’ve had this dish for breakfast, lunch and dinner — it’s just that good. Warm, spicy beans are topped with soft polenta, creamy avocado and chopped salsa. Tons of flavor and even more nutrients packed into each bite.

Here’s what you need:

For the Beans:

  • 2 teaspoons olive oil
  • 1 green bell pepper, seeded and diced
  • 1/2 large yellow onion, diced
  • 4 garlic cloves, chopped
  • 1 (15 oz) can tomato sauce
  • 1 teaspoon agave nectar
  • 1 cup fresh cilantro, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 (15 oz) cans organic black beans, drained and rinsed

For the Polenta:

  • 5 cups vegetable broth
  • 1 cup polenta cornmeal
  • 1 Tablespoon olive oil
  • dash of salt

For the Salsa:

  • 1 red bell pepper, seeded and diced
  • 1/4 red onion, diced
  • 1 can organic corn, drained and rinsed

Prepare the Beans:

  1. In a large skillet, saute the bell pepper, onion and garlic in the olive oil. Cook for about 10 minutes (until onion is browned) then add tomato sauce, agave nectar, cilantro, and spices. Cook for another 5 minutes.
  2. Transfer the mixture to a food processor or blender and blend until smooth (be sure to allow steam to escape your blender, or the lid may pop off!)
  3. Return the mixture to the skillet and add the black beans. Cook for about 5 minutes, until beans are heated.

Prepare the Polenta:

  1. In a medium sized saucepan bring the broth to a boil. Add the polenta and whisk it as you pour. Add the olive oil and lower the heat to a simmer.
  2. Cook for 12 minutes, stirring often. Turn off the heat, cover and let sit for 10 minutes.

Prepare the Salsa:

  1. Throw the salsa ingredients together in a bowl and mix!

Assemble Your Fiesta in a Bowl:

  1. Place a large spoonful of beans in each bowl, top it with a big spoonful of polenta and then a spoonful of salsa.
  2. Chop a fresh avocado and some fresh cilantro for add flavor. Enjoy!
