Southwestern Breakfast Burrito

Yum! Veegetarians get to eat breakfast burritos too!
So one morning I saw someone biting into an amazing looking breakfast burrito — you know one loaded with eggs, potatoes and cheese. I started to salivate. Then I went home, threw open the fridge and saw the leftover Southwestern Tofu Burger patties from the night before– Bingo! The Southwestern Breakfast Burrito was born!
Here’s what you need:
- Southwestern Tofu Burger patty
- Whole wheat tortilla
- 1 tsp canola oil
- 1/4 cup chopped tomatoes
- 1/2 avacado chopped
- In a medium frying pan heat the canola oil. Crumble the patty into the pan and saute until browned.
- Wrap the sauteed patty in the tortilla and top with tomatoes and avacado.
