Yum! Veegetarians get to eat breakfast burritos too!

So one morning I saw someone biting into an amazing looking breakfast burrito — you know one loaded with eggs, potatoes and cheese. I started to salivate. Then I went home, threw open the fridge and saw the leftover Southwestern Tofu Burger patties from the night before– Bingo! The Southwestern Breakfast Burrito was born!

  • Southwestern Tofu Burger patty
  • Whole wheat tortilla
  • 1 tsp canola oil
  • ¼ cup chopped tomatoes
  • ½ avacado chopped

  1. In a medium frying pan heat the canola oil. Crumble the patty into the pan and saute until browned.
  2. Wrap the sauteed patty in the tortilla and top with tomatoes and avocado.
